Some like it hot. But I don’t fall into that category. I hate to sweat, I scorch in the sun, and when heat gets unbearable, so does my temperament. So, the last thing I want to do is cook over a stove for my family. I understand they need to eat, but there are tons of no cook dinners I offer them, simply because they are easy, cool, and don’t require any additional heat sources in my home! Here are my five favorites!
It took the kids some convincing to try them, but once they did; they loved them. I simply get their favorite cold cuts (turkey and ham) and place them between two cucumber slices. I’m sure to let the slices sit for a few hours on paper towels, to pull some moisture out. Then, I apply a thin layer of herbed mayo, the lunch meat, and every once in a while, some dill sprigs. Serve them with a side of carrot sticks and you have one cool (literally) and healthy dinner.
Give me a container of hummus and I’m a happy gal. My family loves it too, so it’s easy to serve on a hot day. I scoop out several different types of spreads and place crackers, pita, and olives on a large platter. Everyone digs in, and everyone is happy and full.
For this salad, I open several cans. I use canned corn, black beans, diced tomatoes, and then I slice up onion and add some lime juice to the batch. I serve the salad over a bed of lettuce or let the kids dig in with some tortilla chips. Yum!
Another easy meal involves avocados and tuna. Simple slice the avocado in half, remove the pit, and fill in the hole with some tuna salad (prepared any way you like it). For some added crunch I like to toss in thin tortilla salad strip toppers!
We all enjoy eating shrimp on a hot day. So, I buy a couple pounds to keep everyone feeling full and serve up a side salad that comes directly from our garden. I literally pick and dice up anything and everything we grow-from the lettuce itself, to tomatoes, peppers, and broccoli.
Summer’s heat stinks sometimes. Consider staying away from the stove on the hottest days, and giving some of these no cook dinners for hot nights a try!
